Our Story

Wow, where do I begin. Finding out you are coeliac, gluten intolerant or have other gut issues like IBS or leaky gut syndrome really makes it hard to even enjoy food anymore. If you suffer from IBS and/or multiple food intolerances as well as gluten issues, then some of the gluten free alternatives are not safe for you to eat either. I used to watch some places that offered gluten free food along with gluten containing food, only to realize that the people serving were accidentally cross contaminating the food before it ever made it out of the display cabinets. Watching this made it so that I didn't even want to eat anywhere but my own home. The fear was real.

At You'd Never Know Bakery, we strive to remove those fears by having a completely dedicated gluten free kitchen. We have researched every ingredient that goes into our products all the way back to the producer and/or manufacturer to ensure that there has not been any known chances of gluten contamination. We have studied food chemistry. Learning the chemical properties and interactions of various food ingredients to try to find ways of obtaining the same results that you would get with more traditional food ingredients. We have settled on some very basic but reliable ingredients to achieve the same taste and texture that would result from using traditional wheat ingredients. It is important to us to bring you gluten free choices without the risk of introducing possible contamination.

Our products are not only gluten free, but they are also free of corn starch, potato starch, tapioca starch, soy, nuts, peanuts, and gums.

Maria is a certified Pastry Chef who has thoroughly embraced Gluten Free Baking. Juanita enjoys creating, baking, and testing new recipes. Together we look forward to bringing comfort bakery items back to those of us who have not been able to enjoy them for some time.

We have a limited number of products that are Vegan as well as Gluten Free. We realize that egg and dairy are also common allergens in food. We do rely on eggs for most of our products. We are working on providing more products that do not contain egg and dairy.
